Thank you Nami! Okay, that makes a sense, as the chāshū sauce has a lot of soy sauce flavour and would make it more of a shoyu ramen then. I didn’t even think of that, good thing I wrote you! I won’t use it in my broth then and just omit the ground pork this time. Yes, I always stir fry the miso, doubanjiang, garlic, ginger and shallots, it really gives it a wonderful, deep flavour. Thank you so much for your quick response, it is really a great help! And thank you, I’m sure we will with your amazing recipe!

Hi Michelle! Typically, you would need a tare and soup broth for making ramen (check out my Shoyu Ramen or Shio Ramen), but this miso ramen is a quick version and we make everything in a pot. I don’t recommend using the chashu sauce unless you’re trying to make Shoyu (soy sauce) Ramen recipe. Miso paste and doubanjiang is absolutely necessary for this particular recipe. You can omit the ground pork here, especially since you have chashu already. However, you should still stir fry the aromatics, doubanjiang, and miso etc in the pot, then add the chicken stock to make a ramen broth. Hope this help!
